Drawn from the highland estates of West Java, this cuvée is composed through the deliberate integration of five distinct yeast fermentations, each chosen for its precise contribution to lift, depth, texture, and balance. Guided by carbonic maceration under exacting control, at temperatures ranging between 3 and 16 degrees Celsius, the fermentation progresses slowly, patiently, and without excess, allowing complexity to emerge with clarity rather than force.
The cup is architectural in its expression. A poised opening of tropical fruit, berries, and stone fruit rises with brightness and definition, then settles into a more grounded, cultivated depth. Beneath the fruit lies a refined coffee core, framed by roasted cacao warmth, a discreet thread of spice, and a finish that is long, clean, and composed.
